Antioxidant activity of the seed in Trigonella foenum-graecum L.

Abstract: In order to understand the antioxidant activity of Trigonella foenum-graecum L., the scavenging effects of the extracts on DPPH free radicals, superoxide anion free radicals and hydroxyl free radicals of the seeds were determined with Vc、Ve、TBHQ(tert-butylhydroquinone)and BHT(2,6-tert-butyl-4-methylphenol)used as controls. The results showed that DPPH free radical removal rate was the lowest, lower than TBHQ, BHT, Vc and Ve. Superoxide anionic radical removal rate was in the middle, the same with that of BHT, higher than TBHQ, lower than Vc and Ve. Its hydroxyl radical scavenging ability was the strongest, significantly higher than the other four antioxidants. These phenomena were closely related to the difference of flavonoids and total phenols(0.080 g/L and 0.650 g/L)in the extracts.
