不同冬枣品种果实品质的比较

Comparison of fruit quality of Dongzao jujube from different variety

摘要: 为了解目前天津市场不同品种冬枣品质,本研究以‘黄骅冬枣’‘沾化二代冬枣’‘沾化冬枣’3个冬枣品种为试验材料,比较了其外在品质(单果重、果形指数、硬度)以及内在品质(含水量、可溶性固形物、可溶性糖、可滴定酸、Vc)的差异。结果显示:‘二代冬枣’单果重(28.44 g)、硬度(20.92 kg/cm²)、可溶性固形物含量(16.73%)、可溶性糖含量(28.47%)、可滴定酸含量(0.64%)以及Vc含量(429.57 mg/100g)均为最高;‘沾化冬枣’的果形指数(1.04)、含水量(83.05%)以及糖酸比(89.69)最高;隶属函数综合分析显示冬枣果实品质优劣依次为:‘沾化二代冬枣’‘沾化冬枣’‘黄骅冬枣’。

Abstract: In order to compare the quality of jujube sold on Tianjin market from different variety, the study selectcd three varieties of Dongzao: Huanghua jujube, Zhanhua jujube and the second generation of Zhanhua jujube and compared the differences of the external quality(single fruit weight, fruit shape index, hardness)and internal quality(water content, soluble solids, soluble sugar, titratable acid, vitamin c). The results showed that the single fruit weight(28.44 g), hardness(20.92 kg/cm2), soluble solid content(16.73%), soluble sugar content(28.47%), titratable acid content(0.64%)and Vc content(429.57 mg/100g)of the second generation of Zhanhua jujube were the highest. The fruit shape index(1.04), water content(83.05%)and sugar-acid ratio (89.69)of Zhanhua jujube were the highest. The fruit quality of jujube was in the order of the second generation of Zhanhua jujube, Zhanhua jujube, and Huanghua jujube according to a membership function analysis.
