养殖与野生半滑舌鳎肌肉营养成分对比分析

Comparative analysis of muscle nutrients between cultured and wild Cynoglossus semilaevis

摘要: 完全投喂配合饲料养殖的半滑舌鳎与野生半滑舌鳎的营养价值孰高孰低,目前未见报道。本试验采用国标法检测养殖与野生半滑舌鳎肌肉氨基酸、脂肪酸和矿物质含量。结果表明:养殖半滑舌鳎氨基酸总量含量明显高于野生鱼。根据氨基酸评分(AAS)和化学评分(CS),养殖与野生半滑舌鳎的第一限制性氨基酸均为色氨酸(Trp)。养殖与野生半滑舌鳎肌肉必需氨基酸指数(EAAI)分别为72.45和62.70。养殖半滑舌鳎肌肉脂肪酸总量高于野生鱼,其中二十碳五烯酸(EPA)+二十二碳六烯酸(DHA)总量是野生鱼的7.6倍,EPA是野生鱼的5.5倍,DHA是野生鱼的9.0倍。半滑舌鳎肌肉富含矿物质,其中养殖半滑舌鳎肌肉中硒含量是野生鱼的4.0倍,磷含量比野生鱼高20%,但钙含量比野生鱼低23%。结论养殖半滑舌鳎肌肉整体营养成分和营养价值均高于野生半滑舌鳎。

Abstract: It has not been reported whether the nutritional value of cultured or wild Cynoglossus semilaevis is higher or lower. The national standard method was used to determine the contents of amino acids, fatty acids and minerals in muscle of cultured and wild C. semilaculatus in this study. The results showed that the total amino acid content of cultured C. semilaevis was obviously higher than that in wild fish. According to amino acid score(AAS)and chemical score(CS), the first limiting amino acid of cultured and wild C. semilaevis is tryptophan(Trp). The essential amino acid indexes(EAAI)of cultured and wild C. semilaevis were 72.45 and 62.7, respectively. The total amount of fatty acids in muscle of cultured C. semilaevis was higher than that of wild fish. The total amount of eicosapentaenoic acid(EPA)+ docosahexaenoic acid(DHA)was 7.6 times that of wild fish, in which EPA was 5.5 times and DHA was 9 times of wild fish. The muscle of C. semilaevis is rich in minerals. The selenium content of cultured fish was 4 times that of wild fish. The phosphorus content was 20% higher than that of wild fish, while the calcium content was 23% lower than that of wild fish. In conclusion, the overall nutrient composition and value of muscle in cultured C. semilaevis were higher than those of wild fish.
