Abstract: The content of glucosinolates extracted from rapeseed was studied by solvent method and single factor experiment. The effects of different parameters on the extraction of glucosinolates, such as solvent concentration, ratio of solid to liquid, temperature, time and extract times, were studied, respectively. By using the visible spectrophotometer, glucosinolates content was measured and the optimum extraction conditions were confirmed. The results indicated that the highest content of glucosinolates with 36.84 µmol/g can be obtained at 70 ℃ for extraction of 6 h by using 70% ethanol as solvent and material to solvent ratio of 1:12. Under the same conditions, the residue amount of glucosinolates was 0.23 µmol/g after two extractions which can be ignored.
