摘要: 地沟油是人民非常关注的食品安全问题之一,由于地沟油成分的复杂性和不定量性,造成地沟油的检测困难。本文首先介绍了地沟油的物理性质和化学性质,然后介绍了基于不同物理性质或化学性质开发出来的地沟油检测技术,并对比和总结了几种典型的地沟油检测技术优缺点。光谱技术具有高灵敏度和精确度,因此又重点从荧光光谱、拉曼光谱、傅里叶变换红外光谱和太赫兹光谱几个方面介绍了光谱检测技术。通过对比各种地沟油检测技术,笔者认为荧光光谱法在地沟油检测中有很大的应用潜力。

Abstract: Waste oil is one of the food safety problem which people pay more attentiorto the complexity and non-quantification of waste oil brings great difficulties to its detection. This article introduced the physical and chemical properties of the waste oil, introduced the detection technology based on different physical or chemical properties of the waste oil, and then compared and summarized the advantages and disadvantages of several typical waste oil detection technologies. The spectrum technology has high sensitivity and accuracy, so the spectrum detection technology was mainly introduced from fluorescence spectrum, Raman spectrum, Fourier transform infrared spectrum and terahertz spectrum. By comparing various detection technologies, it concluded that the fluorescence spectrum will have great potential in the detection of waste oil in the future.
