Abstract: The Jinyuan E28 was selected as experimental materials and the effects of different nitrogen fertilizer amount on rice yield and quality were studied. The results show that with the increase of nitrogen amount, the rice yield increased, the seed setting rate decreased, the grain length, width and thickness decreased, but when the nitrogen fertilizer level reached 240 kg/ hm2, there was no significant difference among them. As nitrogen increased, the protein content of rice increased significantly, the taste value decreased, but there was no significant difference between the amylose content, iodine blue value and transmittance among different treatments. The analyses of starch RVA profiles show that with the increase of nitrogen, the peak viscosity, hot viscosity, cool viscosity of rice decreased gradually, and the difference among treatments were significant, and the breakdown value and setback value of rice gradually decreased, but the differences were not significant.
