Research Progress of Voltammetric Electronic Tongue in Food Detection

Abstract: Voltammetric electronic tongue is a kind of measurement system composed of electrochemical sensor array and combined with multivariable data analysis method. for analyzing the composition of fluids. It usually consists of three electrodes, including working electrode, auxiliary electrode and reference electrode. It is introduced the working principles of voltammetric electronic tongue briefly. The application of voltammetric electronic tongue in the detection fields of milk, edible oils, tea, wine and the problems of voltammetric electronic tongue in current studies are focused on. Also, the development direction of voltammetric electronic tongue was prospected.
