Application progress of laccase in food industry and other fields

Abstract: Laccase is a kind of polyphenol oxidase containing four copper ions with a wide range of substrates. It could catalyze many kinds of phenolic compounds and aromatic compounds, and plays an important role in food industry and other multiple fields. On this basis, this paper discussed that laccase, as a new biological treatment method, can not only improve the flavor and clarification of juice, wine, beer and other drinks, but also improve the quality of bread, providing a guartantee for food safety. This paper summarized usage of laccase in the fields of environment protection, papermaking industry, bioassay, agriculture and medicine, and prospected the research and development of laccase in all walks of life.
