4种海棠成熟过程中营养成分含量变化

Nutrient content changes of 4 ornamental crabapple(Malus spp.)during fruit maturity

摘要: 观赏海棠是营造可食用型植物景观的重要植物材料。本研究选取天津地区园林绿化中常用的西府海棠、珠美海棠、八棱海棠和‘绚丽’海棠,对其果实成熟过程中果实和叶片水分含量、干物质含量、果实可溶性固形物含量和果实维生素C含量进行测定和对比,以期为园林生产中不同海棠树种果实的营养价值参考和最佳采收时间提供合理建议。结果表明,4种海棠果实成熟时间有明显差异,‘绚丽’海棠成熟最早,八棱海棠最晚。西府海棠和珠美海棠果实含水量高达80%,鲜食口感好,熟后3 d内采收最佳;八棱海棠果实维生素C含量显著高于其他三者,果熟后6 d左右采收最佳;‘绚丽’海棠果实可溶性固形物含量显著高于其他三者,营养价值最高,含水量低,适于加工食用,果熟即采最佳。本研究为观赏海棠在可食用型植物景观中的应用提供了理论基础。

Abstract: Ornamental crabapple(Malus spp.)is an important germplasm to create edible landscape. In this study, the water content, dry matter content, soluble solid content and vitamin C content of fruits and leaves before and after fruit maturity were measured and compared on Malus micromalus, M. zumi, M. robusta and M. ‘Radiant’, which are commonly used in Tianjin, aiming to provide reasonable suggestions for the nutritional value reference and the best harvest time of different ornamental Malus species in production. The results showed that M. ‘Radiant’ was the first to mature while M. robusta was the last. Fruit water content of M. micromalus and M. zumi was up to 80%, which have better taste in fresh. Their best harvest time was 3 days after fruit maturity. The fruit vitamin C content of M. robusta was significantly higher than the other three, and the best harvest time was about 6 days after fruit maturity. M. ‘Radiant’ fruits showed the highest nutritional value relatively, which had significantly higher soluble solid content than the other three. This study provides a reliable theoretical basis for the application of ornamental crabapple in edible plant landscape.
