Abstract: A new measurement technology, voltammetric electronic tongue based on partially overlapping sensitive electrodes coupled with multivariable data analysis, has been used in detecting lipid food. It consists of external excitation signal sources, sensors array, potentiostat, data acquisition and multivariable data analysis method, which collects the size and shape of the transient response of tested objective from working electrodes. Aiming at these problems of electrochemical workstation that are expensive and only extracts feature information of electrochemical reaction, a kind of voltammetric electronic tongue test system has been developed, and the system achieved response data acquisition, display and storage by USB6211 and LabVIEW. The test results show that the difference of pure milk and melamine-tainted milk with concentration of 160 mg/L can be discriminated by using principal component analysis, the system has better stability.
