Abstract: The environmental factors in water include biological factors and abiotic factors, and there are differences among ecological factors in different aquaculture water bodies. The environmental factors have direct or indirect effects on the quality of cultured fish. The improvement of the quality of cultured fish has always been concerned by researchers, but most of them focus on changing diet, and there are few studies on environmental factors. This paper briefly summarizes the ecological factors, the effects of ecological factors on fish quality and the evaluation of fish quality indicators, in order to provide references for this kind of research.

Key words: cultured fish, environmental factors, fish quality, evaluation of fish quality
