Extraction and Physicochemical Characteristics of Collagen from Skin of Takifugurubripes

Abstract: The acid-solubilized collagen(ASC)and pepsin-solubilized collagen (PSC)extracted from skin of Takifugurubripes were studied on its physicochemical properties, including the structure, purity, thermal denaturation temperature and the amino acid composition, etc. The results show that the ASC and PSC had high purity of 83.19 % and 85.00 %, respectively. The analysis of UV spectra, FTIR spectra and SDS-PAGE of ASC and PSC show that the two kinds of collagen were proved to be proteinⅠwith integrate triple-helix structure. And the thermal denaturation temperatures of ASC and PSC were 29.85 and 30.10 ℃, respectively.
