摘要: 采用日本武共电机株式会社生产的My BoyⅡ食品物性分析仪分别对‘津川1号’和‘津原45’进行测定,探讨My BoyⅡ食品物性分析仪在研究水稻品质、食味过程中的应用。结果表明:使用My BoyⅡ食品物性分析仪对米饭硬度、弹性、附着性和黏性等指标进行测定,可以直接以数据和图表的方式将米饭物理特性表现出来,对水稻品质及食味研究具有重要意义。

Abstract: My BoyⅡ SYSTEM TENSIPRESSER produced by Japanese TAKETOMO ELECTRIC INC. was used to determine ‘Jinchuan No. 1’and ‘Jinyuan 45’ respectively to study the application of My Boy II SYSTEM TENSIPRESSER in theresearch on rice quality and palatability. The results showed that the physical properties of rice, such as hardness, toughness, stickiness and adhesiveness, could be measured by My Boy II SYSTEM TENSIPRESSER. The physical properties of rice could be displayed directlyin the form of data and charts, which would be of great benefit for the study of rice quality and palatability.
